Located at 931-A Armory Drive in Franklin, The Lighthouse Project celebrated its opening week beginning June 23, welcoming the community to experience their fresh, wholesome menu and signature small-town hospitality.

The Lighthouse Project is no stranger to Franklin Southampton. Before opening their brick-and-mortar location, The Lighthouse Project built a loyal following as a popular food truck, serving up fresh smoothies, deli sandwiches, smoothie bowls, fruit bowls, and cold-pressed juices at local events and farmers markets. From Food Truck to Storefront

Their story began in 2018 when the founders participated in the STARTUP Downtown Franklin program. This experience provided valuable business education, mentorship, and networking opportunities, helping them lay the groundwork for their food truck venture. With this foundation, The Lighthouse Project launched its food truck, quickly becoming a local favorite at community events and farmers’ markets with its fresh smoothies and deli sandwiches.

As their reputation and vision grew, The Lighthouse Project set their sights on a permanent home. In 2025, they took part in the STARTUP Franklin Southampton business pitch competition, which offers matching-grant funds, business development resources, and ongoing support to local entrepreneurs. Winning this competition helped provide some of the necessary resources to transition from their food truck roots to a brick-and-mortar smoothie bar.
